Fermentation: Combination of tank and bin fermentation, 21 days fermentation with D21 yeast.  Malolactic fermentation with Viniflora Oenos.  
Ageing: 16 months in French Oak, 8 months in bottle.  
Final Analysis: 0.10% RS, 14.0% alc., 6.0 TA, 3.7 pH
Bottled: 08/07/12, 440 gal. = 185 cases
