Harvest: 10/13/2014, 22.5° Brix, 7.9 TA, 3.3 pH
Fermentation: Barrel Fermented in French Oak, 22° C warm fermentation.  Alpha (T. delbrueckii) and CY3079 (S. cerevisiae) yeasts.  Malolactic Fermentation with CH35.  
Aging: Sur lie aging for 12 months in barrel.  
Final Analysis: 0.15% RS, 13.0% alc., 6.0 g/L TA, 3.72 pH
Bottled: 02/18/16, 590 gallons (248 cases)
