Fermentation:Stainless Steel 10°C cold fermentation with
58W3 and R-HST yeasts. Fermented over 344 days with period of stalling mid January to mid April and a spontaneous malolactic fermentation April to September  
Ageing: 4 months light lees aging
Final Analysis: 0.2% RS, 14.2% EtOH. 5.0 TA 3.7 pH
Bottled: 02/18/16 

Descriptors - Notes of baked peaches and fresh baked bread. Deceptively lush mouthfeel due to extended lees contact framed by fresh acidity and a mild phenolic character. Not your typical Pinot Gris
Food Pairings - Soft, ripe cheeses, crab cakes or chicken alfredo
