2016 Dry Rosé


Descriptors: Highly aromatic with notes of cherry and lavender. A food friendly Rosé with excellent phenolic structure and well balanced acidity.
Food Pairings: Camembert or brie cheese with crackers, ceviche, or summer salad with dried tart cherries.

Varietal: Field blend of major Bordeaux varietals
Region: Seneca Lake, Finger Lakes, New York, USA
Vineyard: Hazlitt 1852 Home Farm
Harvest: 10/6/16, 22.3° Brix, 4.08 TA, 3.45 pH
Fermentation: Stainless Steel cool fermentation at 12° C, Rhone 4600 yeast. Fermented over 35 days.  
Ageing: 3 months on light lees.  
Final Analysis: 0.2% R.S., 13.2% alc., 4.5 TA, 3.2 pH
Bottled: 5/10/17, 324 gallons (136 cases)
