Descriptors: Highly aromatic with notes of cherry and lavender. A food friendly Rosé with excellent phenolic structure and well balanced acidity.
Food Pairings: Camembert or brie cheese with crackers, ceviche, or summer salad with dried tart cherries.

Vineyard: 100% Hazlitt 1852 Home Farm
Harvest: 10/12/17, 21.4° Brix, 6.06 TA, 3.22 pH
Fermentation: Stainless Steel cool fermentation at 13° C, Rhone 4600 yeast. Fermented over 30 days.  
Ageing: 3 months on light lees.  
Final Analysis: 0.0% R.S., 12.6% alc., 4.0 TA, 3.51 pH
Bottled: 07/18/17, 344 gallons (144 cases)
