2017 Unoaked Chardonnay


Descriptors – Pineapple, baked pear and honey notes all held together with a pleasing minerality.  
Food Pairings – Caeser salad, brie or other creamy cheeses.  Fresh fruits or shrimp scampi.  
Crafted to highlight the varietal characteristics of Chardonnay, this wine 
showcases a pure example of this Burgundian grape sans the influence of oak.

Varietal: 95% Chardonnay, 5% Riesling
Region: Seneca Lake, Finger Lakes, New York, USA
Vineyard: 100% Hazlitt 1852 Lamoreaux Farm
Fermentation: Stainless steel fermentation with BioDiva and Cross Evolution yeasts.  Average temperature of 13° C.  
Ageing: Non-Oaked and 3 months light lees
Final Analysis: 1.5% RS, 11.4% alc., 5.3 TA, 3.55 pH
Bottled: 07/08/2018, 1,040 gallons = 437 cases
