Descriptors - Flavors of gooseberry and white peach, with a hint of lees aging lifted off of the tongue by fine bubbles. Fresh acidity compliments the fruit and holds the finish.  
Food Pairings - Light appetizers, cheeses and fresh fruits.  
The complimentary flavors of Grüner Veltliner and Sauvignon Blanc make for a refreshing blend.

Fermentation: Stainless steel, 10-12° C cool fermentation with NT116, 58W3 (GV) and QA23, Vin 13 (SB) yeasts.    
Ageing: 3 months on fine lees.  
Final Analysis: 0.6% RS, 11.2% EtOH., 6.6g/L TA, 3.29 pH
