WINEMAKER'S NOTES: 
Descriptors:  Crème brûlée and baked apple with notes of toasted nutmeg. Smooth and medium bodied while still fresh and adequately structured. 
Food Pairings: Pairs well with Caesar salad, Aged Cheddar and similar cheeses, and grilled salmon.

This textured and complex Chardonnay will satisfy the wine drinker looking for the kind of wine only barrel fermentation and sur lie aging can produce.

Fermentation: Barrel Fermented in 100% French Oak. 22° C warm fermentation, uninoculated. Yeasts and bacteria present in the barrel from past vintages ferment to completion.
Ageing: Sur lie aging for 11 months in barrel
Final Analysis: 0.2% R.S.  13.0% alc.  4.65 g/L TA   3.8 pH
